This salsa is outstanding! It is low calorie, low fat and filled with
flavor. My favorite thing is to spoon it over my Best Turkey Burgers
but it also pairs well with nearly any meat or fish dish. You can steam
or bake fish, poultry or lean beef and pork and then serve this on the side. I'm
all about the flavor so this recipe is a staple in my house.
5 Tbls. corn, fresh or frozen, defrosted & grilled (yesterday
I grilled a
ear, today I used canned)
1 Tbls. chopped onion
12 cherry tomatoes, seeded and chopped
1 tblsp. fresh lime juice
1 garlic clove put thru a press
1 tblsp. chopped fresh cilantro
2 tsp. olive oil
Mix all ingredients together and let it sit at room temperature for
about a half hour to allow the flavors to blend.
