This recipe includes the word "fry" but there's
nothing fatty about it at just under 4 grams of fat per serving. It's
very spicy so if you don't like spicy food, steer clear. If you
do, serve it over brown rice and enjoy the strong, spicy flavor. I
loved it!
1 lb shrimp, peeled and deveined
1 tbsp Cajun spice seasoning
2 tsp canola oil (I used 100% olive oil- no EVOO)
2 Red peppers, seeded, inner ribs removed and cut into strips
1 orange pepper (you can use green but I don't care for green peppers), seeded,
inner ribs removed and cut into strips
2 cloves minced garlic
½ cup white wine
Juice of 1 lemon
Hot sauce to taste
2 cups cooked brown rice
Toss shrimp with Cajun spice seasoning and set aside. Heat 1
tsp oil in large skillet and sauté peppers for 6 minutes over
medium-high heat. Turn heat down and add garlic, stirring constantly
so garlic does not burn. Remove peppers and garlic from pan,
wipe pan out with paper towel.
Return pan to medium-high heat and heat remaining tsp of oil. Add
shrimp and cook approximately 3 minutes, stirring frequently. Add
wine and lemon juice, peppers and garlic and cook for 2-3 minutes.
Season with hot sauce; serve each portion over ½ cup cooked
brown rice.
