Beet Salad w/Mandarin Oranges

My client Erika gave me this recipe and it is so tasty.  I highly recommend it with the fresh beets which I just wrap in foil with a little olive oil and roast in a 350 degree oven for about 1 hour or until tender.  Delish!


Whisk together:

2 tablespoons mandarin orange juice
2  tablespoons cider vinegar
1 tablespoon olive oil
2 teaspoon dijon mustard

Toss in:

1 can beets (juice drained) or fresh roasted or boiled beets
mandarin orange halves without juice

Let sit for an hour and then serve at room temperature or chilled.
